Only channeled heals like Healing Tendril can be interrupted. Other healing spells like Healing Hands cannot be interrupted by NPCs as of yet, merely set back (delayed slightly).
Most, if not all, (can't remember the specifics of Earthshaker right now) stuns last for five seconds.

If you ever want do any soloing on the 'tougher' content, you will need heals. If you are strictly a party knight, you really wouldn't need heals I guess.
Can the Healing Breeze be interupted?

The act of casting Healing Breeze cannot be interrupted by NPCs, so it will always restore some health (unless caster or player target dies midcast of course), however there was a bug which caused the Healing over Time effect to be interrupted if the healed player attacked anything while it was active.
I haven't checked this ingame to see if it's been fixed yet, but since it wasn't mentioned in the patch notes, I would assume the bug is still there.
